Alfred Gratien Bruit
Ripeness
One of the most often discussed topics in the wine industry is ripeness. When exactly are grapes ripe? At what point are they overripe? It's an important question because as ripeness increases, so does sweetness which means so does alcohol. And wines with a lot of alcohol can not only feel clumsy and dull on the palate but also taste pruney or like raisin juice.
The line between ripe and overripe grapes is very hard to judge, especially when the harvest is proceeding quickly, yet every vinter must pursue ripeness even at the risk of going too far. Ripeness is the linchpin for total flavor. Michael Silacci of Napa Valley's Opus One winery described it perfectly. He likened the flavor of unripe grapes to Tang orange drink, with a sort of shallow, short, monodimensional taste, whereas ripe grapes are like fresh squeezed orange juice profound, deep, rich, intense, and lasting on the palate. It's easy to see why winemakers pursue ripeness as the viticultural Holy Grail.
