Domaine du Pere Guillot AC Beaijolais Rouge 2006

Meniscus: The meniscus is the rim of the wine that touches the surface of a wineglass. Wheile we may remember looking at the meniscus of water or other liquids in a high school physics lab, the concept is also important in the sensory evaluation of wine.

The first step in evaluating any wine is to look at it after it's been poured. By tilting the glass at a 45°angle against a white background under a bright light, you can ascertain certain information abou the wine, in particular, its age. Take a cabernet sauvignon. If the wine is young, its deep ruby color will carry through to the rim whereas if the wine has been aged, there will be some rim variation; that is, the core of the wine will be deeper in color, and the rim, or meniscus, will be significantly lighter, if not water-white. Both red and white wines evolve this way over time.
