Bebian Rose lebrun-couty 2007
Question: Did Dom Perignon really invent Champagne?
Answer: Dom Perignon, a 17th century Benedictine monk at the Abbey of Hautvillers(now owned by Moet Chandon) was highly instrumental in improving the quality of Champagne, but no, he did not invent it. In fact, Dom Perignon's main objective in improving Champagne was to stop the naturally occurring carbonation.
Champagne is the most northern of the French wine regions, and as a result temperatures there are extremely cool. Historically, the still wines of Champagne were made in the fall and left to settle in barrels over the winter, but the deep underground cellars were so cold that the yeasts would stop fermenting before all of the grape sugar had been turned into alcohol. Once spring arrived and the wines warmed up, the yeasts would begin to referment, resulting in a wine that appeared to sparkle.
