Taleggio and wine
Taleggio is one of Italy's best-kept secrets. This sophisticated cow's milk cheese hails from Lombardy and is prized by cheese lovers for its very rich, ripe flavors of nuts, salt, and sweaty gym socks. It starts its life tangy and springy and get richer, ruinier, and more powerfully aromatic as it ripens. Because of its earthiness, Taleggio is smashing with a white Burgundy such as a Meursault. In general, earthy-salty-fatty cheeses like this one do far better with white wines than reds.
